Game Day Pizza Dip

Are you ready for some FOOTBALL?
It's almost Game Day. If your having a Super Bowl party, you'll want to put this pizza dip on the menu.  Not only is it ridiculously easy to prepare, but it's also everything you love about pizza but in the form of a dip. What could be more perfect! If your having a large party just double the recipe and you're set to feed a crowd.
Game Day Pizza Dip

INGREDIENTS:
12 ounces shredded mozzarella
1 8-ounce cream cheese, softened
3 1/2 tablespoons olive oil
1 teaspoons crushed red pepper
1 teaspoons kosher salt
1/2 teaspoon dried basil
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 cup tomato sauce
4 ounces pepperoni,sliced

DIRECTIONS:
In a food processor, combine the cream cheese, cheese, olive oil, salt and the spices. Pulse the mixture until very well combined. Shape the cheese mixture into a football or just a mound.

Make a deep well on top of the cheese mixture. Put the tomato sauce in the well you made in the top. Shingle the pepperoni all around the exterior. Dig in!

Sweet and Spicy Party Mix


Tomorrow is Super Bowl Sunday. A big day for football and partying for many. I'm not really into NFL football, (college football is another story!) I'm not even sure which two teams are playing this year. So for me the Super Bowl means two things: funny commercials and tailgate food. It's really just an excuse to break out the chips and dips, chicken wings, and see how many foods can be made into the shape of a football. I stashed this recipe away for just such an occasion. The combo of sweet and spicy make this party mix the perfect addition to your Super Bowl parties. Make a big bowl of this or it might not last until halftime. (like how I threw in that football reference?!?)  Whether or not you watch the game or just the commercials, grab a handful of this party mix and enjoy!


 *full disclosure: Hubs won't be home for the Super Bowl this year so I'll actually be munching this while watching Downton Abbey.  I'm still upset/angry about last weeks episode, so party food will be needed!


Sweet and Spicy Party Mix

INGREDIENTS:
3 tablespoons brown sugar
2 teaspoons chopped fresh thyme, divided
3/4 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/4 to 1/2 teaspoon ground red pepper
1/2 cup pecan halves
1/2 cup plain whole almonds
1 1/2 tablespoons butter
3 cups mini  pretzels
1 cup crispy rice cereal squares
2 tablespoons maple syrup

METHOD:
Preheat oven to 350°.
In a small bowl, combine brown sugar, 1 teaspoon thyme, salt, cinnamon, and red pepper.
Put the pecans and almonds on a jelly-roll pan. Bake at 350° for 10 minutes or until the nuts begin to brown. Keep an eye on them because the nuts can burn quickly! In a medium bowl, combine the nuts with the butter ,stirring until butter melts.Stir in pretzels, cereal, and syrup. Sprinkle the sugar mixture over pretzel mixture; toss gently to coat. Spread pretzel mixture in a single layer on jelly-roll pan. Bake at 350° for 10 minutes, stirring once. Sprinkle with the remaining 1 teaspoon thyme. Cool completely.

Party time!



I'm a member of a book club that started in my neighborhood a few years ago. We're an eclectic, opinionated, fun group of women, ranging in age from mid 30's to early 60's.We meet monthly and take turns hosting the book club in our homes. It's always a good time. We have lots of food, drinks, and gossip deep, intellectually stimulating book discussion. 
One of the things I enjoy about hosting the book club is that it gives me a chance to break out the party food recipes that I've been tucking away. I had been wanting to make a cheese ring for a while and hosting the book club ladies was the perfect excuse to break out this old Southern favorite. I found several different recipes on the internet for this ring, even one know as Rosalyn Carter's Cheese Ring. How Southern, circa 1970's is that? All the recipes were basically the same with just a few minor differences. My ring is a combination of things I liked from a couple of recipes I found. 
After the cheese ring is taken out of the mold, the center of the ring is filled with strawberry preserves. I dressed it up with a sprinkle of pecans and some fresh fruit. I loved how retro-y it looked and the book club devoured it.


Cheese Ring with Strawberry Preserves

Ingredients:
1 pound shredded sharp Cheddar cheese (white cheddar is good too)
3/4 cup mayonnaise
5 medium green onions, finely chopped (white parts only)
1 pinch cayenne pepper
1/4 teaspoon garlic powder, or to taste
1 cup of chopped pecans

Method:
In a medium bowl, mix together the Cheddar cheese, mayonnaise, green onion, pecans, cayenne pepper, and garlic powder until well blended. *Coat a ring shaped gelatin mold generously with cooking spray, or you can use a silicon mold. Spoon the cheese mixture into the mold, cover, and chill for 2 to 3 hours to set.
Unmold onto a serving plate, and pour strawberry preserves into the center. Arrange crackers and fruit around the outside of the ring.
*If you don't have a mold, you can make the cheese into a log and wrap it in plastic wrap to set up. Serve the strawberry preserves on the side. I used these homemade strawberry preserves, but any good quality store bought preserves would be good. The ring would also be delicious served with raspberry preserves.

Bacon Cheddar Whoopie Bites


I found this recipe while searching for new party food ideas. The name caught my attention first...bacon cheddar whoopie bites?! Whoopie pies are sweet, right? Ok so they're not actually anything like a whoopie pie but they kind of look like a whoopie pie so why not? After reading through the recipe, I thought they sounded  like a Southern style cheese straw, kind of a cheesy savory shortbread.  These cheese straws have one up on ordinary cheese straws. These are sandwiched together with a cream filling. It sounded like a great combo to me. Besides they have bacon in them so they're already "Winning"....(hmm maybe it's the whoopie part that brought that Charlie Sheen quote to mind...;)  

 
Bacon Cheddar Whoopie Bites

Ingredients:
1/2 cup ricotta cheese, room temperature
6 ounces cream cheese, room temperature
2 tablespoons heavy cream or milk
2 teaspoons grated lemon peel
2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon crushed red pepper
3/4 cup butter, cut into pieces
2 cups finely shredded sharp cheddar cheese
1/2 cup pecans, chopped
8 slices cooked bacon, crumbled
2 to 3 tablespoons ice water

    Method:
    Heat oven to 400°F. Spray large cookie sheets with no-stick cooking spray or line with cooking parchment paper. To make filling, in medium bowl, beat ricotta cheese and cream cheese with electric mixer on low speed until blended. Add milk; beat on medium speed 3 minutes until light and fluffy. Stir in lemon peel. Cover; refrigerate.

    In food processor, add flour, baking powder and red pepper. Process until well blended. Add butter and process until mixture resembles coarse crumbs. Add cheddar cheese, pecans and bacon. Process with on-and-off pulses until mixture is consistency of fine crumbs. With food processor running, gradually add enough water through feed tube and process just until dough pulls away from side of bowl and forms a ball.

    Shape dough into 1 1/4–inch balls; place 2 inches apart on cookie sheets. Using fingers, press each ball into about a 2-inch round.

Bake 8 to 12 minutes or until edges are golden brown. Cool 2 minutes; remove from cookie sheets to cooling racks. Cool completely, about 10 minutes.

Spread or pipe about 1 tablespoon filling on bottom of half of the rounds. Top with remaining rounds, bottom sides down. Store covered in refrigerator. Assemble these bites a couple of hours before you plan to serve them to let the flavors blend.
