Game Day Pizza Dip

Are you ready for some FOOTBALL?
It's almost Game Day. If your having a Super Bowl party, you'll want to put this pizza dip on the menu.  Not only is it ridiculously easy to prepare, but it's also everything you love about pizza but in the form of a dip. What could be more perfect! If your having a large party just double the recipe and you're set to feed a crowd.
Game Day Pizza Dip

INGREDIENTS:
12 ounces shredded mozzarella
1 8-ounce cream cheese, softened
3 1/2 tablespoons olive oil
1 teaspoons crushed red pepper
1 teaspoons kosher salt
1/2 teaspoon dried basil
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 cup tomato sauce
4 ounces pepperoni,sliced

DIRECTIONS:
In a food processor, combine the cream cheese, cheese, olive oil, salt and the spices. Pulse the mixture until very well combined. Shape the cheese mixture into a football or just a mound.

Make a deep well on top of the cheese mixture. Put the tomato sauce in the well you made in the top. Shingle the pepperoni all around the exterior. Dig in!

Peanut Butter and Vanilla Greek Yogurt Dip

So I can't believe it but school starts NEXT week! Where did this summer go? It seems to gone by in record speed this year. Anyway, Walkers Shortbread send me another box of cookies. This time I got to sample a variety of their cookies in mini bite-sized form! They come in small resealable bags, so convenient to grab and go. These cookies are the perfectly sized for lunch on the go. Great for busy moms needing an easy, delicious school lunch snack that the kiddos will love.
The mini's are wonderful, just like all of Walkers Shortbread cookies. These are sized just right for easy mouth pop-ability! The newest addition to the minis line, and my personal favorite, are the crunchy oatmeal cookies. Made with ingredients like; whole wheat flour, butter and oats, these cookies are a treat you can feel good about giving to your family.

School lunches can get monotonous. So here's an easy, very healthy vanilla Greek yogurt and peanut butter dip that will jazz up any lunch box. This dip is a perfect accompaniment for apple slices, a banana, or a handful of Walkers crunchy oatmeal mini cookies!

Ok this one is sooo easy, you can let the kids make it...I say that makes this dip perfect for school lunches!

Peanut Butter and Vanilla Greek Yogurt Dip

1 5-6 ounce container of vanilla Greek yogurt, about a half a cup ( I used the Oikos 0% fat vanilla from the four pack)
1 tablespoon or so,  natural peanut butter (the kind you have to stir)
1 teaspoon honey (if you are not using a natural peanut butter you probably won't need any extra sweetness)

Mix it all together and start dipping

Party time!



I'm a member of a book club that started in my neighborhood a few years ago. We're an eclectic, opinionated, fun group of women, ranging in age from mid 30's to early 60's.We meet monthly and take turns hosting the book club in our homes. It's always a good time. We have lots of food, drinks, and gossip deep, intellectually stimulating book discussion. 
One of the things I enjoy about hosting the book club is that it gives me a chance to break out the party food recipes that I've been tucking away. I had been wanting to make a cheese ring for a while and hosting the book club ladies was the perfect excuse to break out this old Southern favorite. I found several different recipes on the internet for this ring, even one know as Rosalyn Carter's Cheese Ring. How Southern, circa 1970's is that? All the recipes were basically the same with just a few minor differences. My ring is a combination of things I liked from a couple of recipes I found. 
After the cheese ring is taken out of the mold, the center of the ring is filled with strawberry preserves. I dressed it up with a sprinkle of pecans and some fresh fruit. I loved how retro-y it looked and the book club devoured it.


Cheese Ring with Strawberry Preserves

Ingredients:
1 pound shredded sharp Cheddar cheese (white cheddar is good too)
3/4 cup mayonnaise
5 medium green onions, finely chopped (white parts only)
1 pinch cayenne pepper
1/4 teaspoon garlic powder, or to taste
1 cup of chopped pecans

Method:
In a medium bowl, mix together the Cheddar cheese, mayonnaise, green onion, pecans, cayenne pepper, and garlic powder until well blended. *Coat a ring shaped gelatin mold generously with cooking spray, or you can use a silicon mold. Spoon the cheese mixture into the mold, cover, and chill for 2 to 3 hours to set.
Unmold onto a serving plate, and pour strawberry preserves into the center. Arrange crackers and fruit around the outside of the ring.
*If you don't have a mold, you can make the cheese into a log and wrap it in plastic wrap to set up. Serve the strawberry preserves on the side. I used these homemade strawberry preserves, but any good quality store bought preserves would be good. The ring would also be delicious served with raspberry preserves.

Peanut Butter Chocolate Chip Hummus Dip

Yes you read that title right. It says hummus ... please don't run away!


 I haven't lost my mind, well not completely anyway, but that's not what's going on here! This is hummus, that looks and tastes like peanut butter chocolate chip cookies! Sounds crazy right? I did a double take too when I came across this recipe on The Wannabe Chef. After reading through the recipe, I couldn't wait to give this a try. I mean it sounded so odd I just had to find out for myself. Luckily, I had everything the recipe called for in the pantry, so I whipped up a batch immediately! I liked it, a lot...I see me experimenting with other variations of sweet hummus dips in the near future.
Cookie dough hummus is not something I've ever thought to make but I'm glad I did. Not only is this stuff good (like eat the whole bowl good), but it's way better for you than eating a bowl of actual cookie dough. Chickpeas are packed with protein and fiber, not a claim your average bowl of cookie dough can make. Perfect those of us you that are still keeping your New Years resolutions to eat healthier foods this year.

Peanut Butter Chocolate Chip Hummus Dip

Ingredients:
2 cups chickpeas
1/4 cup natural peanut butter
1/4 cup + 2 tablespoons maple syrup
1/2 Tablespoon vanilla extract
1/4 cup chocolate chips
 
Method:
Drain, rinse, and peel* your chickpeas. 

Yes, those are chickpeas!

In a food processor, add the first 4 ingredients and process for 3-5 minutes or until the hummus is very smooth. Remove the mixture from the food processor and stir in the chocolate chips. Serve with graham crackers, apple slices, or eat it right off the spoon, or like I did... 

Don't judge!
*  If you'd rather not peel the chickpeas, you don't necessarily have to. Peeling the chickpeas makes for the creamiest hummus and  is worth the effort. It also helps cut down on the earthiness of the chickpeas a little, which makes this taste more like cookie dough.

It also makes a great healthy snack for the kiddo's!
