Happy Valentine's Day


Need some inspiration for a sweet treat for that special someone in your life?? Here are a few great treats that are sure to make your sweetheart swoon!

1.Chocolate Valentino Cake The name says it all! This rich decadent flourless chocolate cake will have your sweetie falling at your feet...end you don't have to tell them how easy it is to make!
2. Strawberry Panna Cotta  So pretty and delicious...the perfect end to a romantic dinner.
3.Brown Sugar Fruit Dip...perfect paired with ripe strawberries....or anything else you want to dip. Use you imagination!...umm I was thinking like pineapple or grapes...what were you thinking??? wink wink
4.Knock-off Salted Chocolate Caramel Candies  Made with store bought caramel squares, these take only a few minutes to make but will have your Valentine begging for more!
5. Pink Champagne Cake It's cake made with Champagne...what's not to love!
6. Chocolate Espresso Mousse Richly chocolate but light and fluffy. Definitely swoon inducing!

Peanut Butter Chocolate Chip Hummus Dip

Yes you read that title right. It says hummus ... please don't run away!


 I haven't lost my mind, well not completely anyway, but that's not what's going on here! This is hummus, that looks and tastes like peanut butter chocolate chip cookies! Sounds crazy right? I did a double take too when I came across this recipe on The Wannabe Chef. After reading through the recipe, I couldn't wait to give this a try. I mean it sounded so odd I just had to find out for myself. Luckily, I had everything the recipe called for in the pantry, so I whipped up a batch immediately! I liked it, a lot...I see me experimenting with other variations of sweet hummus dips in the near future.
Cookie dough hummus is not something I've ever thought to make but I'm glad I did. Not only is this stuff good (like eat the whole bowl good), but it's way better for you than eating a bowl of actual cookie dough. Chickpeas are packed with protein and fiber, not a claim your average bowl of cookie dough can make. Perfect those of us you that are still keeping your New Years resolutions to eat healthier foods this year.

Peanut Butter Chocolate Chip Hummus Dip

Ingredients:
2 cups chickpeas
1/4 cup natural peanut butter
1/4 cup + 2 tablespoons maple syrup
1/2 Tablespoon vanilla extract
1/4 cup chocolate chips
 
Method:
Drain, rinse, and peel* your chickpeas. 

Yes, those are chickpeas!

In a food processor, add the first 4 ingredients and process for 3-5 minutes or until the hummus is very smooth. Remove the mixture from the food processor and stir in the chocolate chips. Serve with graham crackers, apple slices, or eat it right off the spoon, or like I did... 

Don't judge!
*  If you'd rather not peel the chickpeas, you don't necessarily have to. Peeling the chickpeas makes for the creamiest hummus and  is worth the effort. It also helps cut down on the earthiness of the chickpeas a little, which makes this taste more like cookie dough.

It also makes a great healthy snack for the kiddo's!

Not your average fruit dip

I have to say I have never been a fan of fruit dips. You know, that seemingly obligatory, tooth-achingly sweet goop that shows up on fruit trays, salad bars, and at catered events. I'd come to the conclusion that the only reason that the only reason for its existence, was to mask bad, under ripe fruit. To somehow fool us into eating that rock hard cantaloupe or barely pink strawberry . Or perhaps like kids, we needed to be enticed into eating our fruit. Anyway, I've never seem a need for dip with fruit, but having been a caterer, fruit dip is regular request from clients, to be included with the mandatory fruit and veggie tray. I've made several different fruit dips over the years but never had one that appealed to me in the least. I was recently catered an event and needed that requested dip. So I decided to look for something new. This particular recipe caught my eye because it included coffee liqueur. It seemed like such an odd combination of ingredients that I just had to give it a try. The recipe said that the coffee liqueur was optional, so I added a couple of tablespoons to see if I'd like it.  Oh my! It's amazing. It tasted so good I added the rest of the 1/3 cup.  This recipe also called for cool whip, a product I never use, but I did this time. I plan to make it next time with sweetened whipped cream, and see how that works. I'm just glad I found a fruit dip that actually tastes good!!



Brown Sugar Fruit Dip

Yield: 3 1/2 cups

Ingredients: (printable recipe)

1/2 cup brown sugar, firmly packed
1 8 ounce package cream cheese, softened
1 cup sour cream
1 teaspoon vanilla extract
1/3 cup coffee liqueur
1 cup frozen whipped topping, thawed
assorted fruits

 


Method:
Beat brown sugar and cream cheese at medium speed with an electric mixer until smooth. Add sour cream, vanilla, and coffee liqueur, beating until smooth. Fold in whipped topping. Cover and chill 4 hours. Sprinkle top of the dip with brown sugar garnish, if desired. Serve with fruit. Strawberries, pineapple, and grapes are really good with this dip.


This dip is not too sweet, with just the right amount of tang that it really compliments the fruit, and doesn't just mask it with sugar. The next time you have a party, whip up this dip to go with that fruit tray. You just might be a convert too!
